Background:
Protein security can only be achieved through round the year uninterrupted supply of animal products such as meat even at the remotest place. Various goat meat product developed in the country are having limited shelf-life and refrigeration requirement. The major reason for canning meat is to provide safe products that have desirable flavour, texture, and appearance. Successful production of commercially sterile canned meat products requires inactivation of enzymes and destruction of all viable microorganisms. Retort processing of conventionally prepared chevon can help extending its shelf-life significantly even at room temperature without any noticeable sign of spoilage:
Technology Details:
We have developed retort processed highly acceptable various curry and non-curry based chevon products having storage life for several months at room temperature. Our product has developed retort processed chevon curry, healthy chevon nuggets and patties. The quality of developed products has been assessed through evaluation of physicochemical, colour, texture, sensory parameters. The shelf life of the developed was assessed for their stability at room temperature.
